Friday Favorites 6/27/14

A lot of big things have happened to me in the past few weeks.  One of those things is that only now, in my 25th year of life, am I finally discovering the true delicious potential of zucchini.  So for my favorites this week, I'm going to share some of my favorite recently-discovered zucchini recipes - perfect for summer!  Please leave more in the comments if you have any good ones!

Zucchini Potato Bake
If you're tired of grilling zucchini on a skewer, or frying it up in some butter, this is perfect.  Pretty much you just roast it in the oven with potatoes and peppers for a while, and you're done!  The hardest part of this recipe is just taking the time to chop everything up.  Plus, except for the zucchini, you most likely have everything else in your pantry! I'm going to double this recipe next time, so maybe I'll have some for daytime snack... mmm....




Chocolate Zucchini Bread
I don't know who thought putting zucchini in bread was a good idea, but I'd like to meet them.  And let them bake for me.  Everyday.  I know, zucchini bread sounds gross, but really you can't even taste it - but you know it's there because of the moist texture (anyone out there hate that word? I won't say it again.  Moist.  Oops.).  My favorite way to make it is in mini muffin tins... except they're so easy to eat, they don't last very long.  I'm talking I can pound 48 mini muffins in two days... by myself.  But it's healthy because of the zucchini.... right? ;)

The last time I worked on a resin project, my
eyes hurt and my throat burned because of the fumes the liquid plastic gave off... all I wore to protect myself were sunglasses and plastic kitchen gloves...and I had even debated wearing the kitchen gloves. It wasn't healthy, so I resolved to purchase a couple of things before I worked with resin again. The goggles and respirator I purchased seem to have done the trick--after wearing these safety precautions while experimenting with resin again today, my eyes aren't weepy and my throat is just fine (even though I could smell the resin fumes through the respirator). Even though I looked scary and it was super hot under that mask, it was worth it to protect myself from potential crafting injuries.
